04 Feb tropical soft serve
It’s a little cooler in Byron Bay this week. But summer is far from over, and the hot weather will be back again soon for its last hurrah. And when it is we will be ready… with a paleo friendly, dairy free soft serve that tastes like summer.
1 banana, cut into slices and frozen
1 mango, cut into cubes and frozen
150ml almond milk
2 fresh pineapple slices, cores removed
a pinch of vanilla powder (optional)
2 tbsp raw macadamias, chopped coarsely
2 tbsp shaved coconut
Let’s do this!
In a high speed blender (I recommend this one), add the frozen banana, frozen mango, almond milk and vanilla, and blend until smooth and creamy.
Divide into 2 serving dishes, and top with the pineapple, macadamias and coconut.
Yep – it’s that easy!
