A farmer once said to me, “When the produce is fresh, don’t add too many other ingredients – let it speak for itself.” And if you work with seasonal ingredients, this is totally the case! Simple fare can be delicious and amazing!
Take this chicken casserole for example. It’s a staple at my place. It’s also one of the high-rotation favourites in my program, Shiny Healthy You – Fatigued to Fabulous in 12 Weeks.
It’s quick and easy to whip up after a workout (or just after work!) and can feed a whole little tribe of hungry humans. I always double the recipe and freeze some for later too – but sometimes it gets devoured before it can make it into storage!
Aaaaaaand… with the addition of bone broth, it’s not just yummy – it has gut healing properties as well. Oh – and it’s Hayley-Proof, which means nearly ANYONE can make it!
1 large onion, diced
1 stick celery, diced finely
1-2 tbsp extra virgin olive oil
800g free range chicken thighs
2 cloves garlic, crushed
3 cups chicken bone broth or stock
1 carrot, diced
3-4 sprigs of fresh thyme
Let’s do this!
In a large, heavy-bottomed pan, sauteé the onion and celery in the olive oil over a medium heat until onion becomes translucent.
Add the chicken pieces and stir until lightly browned.
Add the garlic and stir briefly for 1 minute.
Add the bone broth, carrot and thyme, and simmer, covered, over a low heat for around 15 minutes, until chicken is cooked through.
Serve with quinoa (or brown rice if you prefer a non-paleo option).
