23 Jun raw lime tart

Limes are in season at the moment and are a rich source of vitamin C – so here’s a tangy, refreshing way to ward off colds and flues. The avocados (yes, avocados!) are the perfect carrier for the lime flavour.
1 cup almonds
10 dried dates
1/4 cup + 2 tsp coconut oil
3 ripe avocados
1/2 cup lime juice
3/4 cup coconut syrup (you can use honey or agave nectar if you prefer)
Wedges of lime, to garnish
Let’s do this!
Grab you Optimum blender, and whizz the almonds on a low speed until they become a fine powder.
Add the dates and 2 tsp coconut oil and blend some more until mixture starts to stick together.
Press into a tart dish, making sure it’s nice and even.
Next blend the avocados, the 1/4 cup of coconut oil, lime juice and coconut syrup on a high speed until it goes nice and fluffy. Don’t blend too long or it could go brown.
Pour this mixture into the pie dish, and freeze for 2 hours (you can leave it in the freezer for longer if you like)
Remove from freezer 15-20 minutes before serving, cut with a wet knife, and garnish with lime wedges.
