Sweet Potato Fritters

I’ve discovered a new gluten free, grain free alternative to wheat flour – would you believe it… banana flour! Yep, you heard correctly, it’s flour made from green bananas. And it’s awesome!

I’d heard really good things about the texture and versatility of this product, but I was yet to try it, so I contacted Mt Uncle’s Banana Flour to find my nearest stockist… and they offered to send me a pack for free. How cool is that?

Mt Uncle Banana Flour

First cab off the rank with my banana flour experimenting… paleo sweet potato fritters. Yum!

Sweet Potato Fritters

1 cup grated sweet potato

2 tbsp chopped fresh herbs (I used chives and parsley)

2 eggs, beaten

2 tbsp Mt Uncle’s banana flour

pinch salt

1 dessertspoon virgin coconut oil, for frying

Let’s do this!

Combine sweet potato, herbs, eggs, banana flour and salt in a bowl and stir until combined.

Over a medium heat, warm up your coconut oil in a large, flat frypan, and drop in tablespoonfuls of the fritter mix. Flatten down your fritters with the back of a spatula, and fry for about 5 minutes on each side, until golden brown.

Serve with salad, fermented veggies, or a dollop of coconut yoghurt (or all three!).

Makes 6 fritters.

    Hi, terrific idea with the banana flour – never seen that before! As they are green, i assume there is very little ‘banana’ flavour? Have you tried using plantains (green cooking bananas)? Perhaps the flour is made from these starchy green bananas? I have made pancakes by using blended plantains (using my optimum I got from you!) and they where a huge hit with the kids. Anyhow will definitely try these out at some stage, thanks!

      Hi Charmian, yes, the flour is made from green bananas, so it has a very neutral taste. Thanks for the pancake idea – I’m going to try it sometime! 🙂

    Such a great alternative banana flour. We have tried just about all flours and sadly we react to this flour as well. Hoping with some gut healing we can cook with this flour.
