Cucumber Bites

I served these bites up at my Raw High tea recently, with the intention of them being a palate cleanser in between loads of decadent desserts. They ended up being way more popular than I ever imagined!

Cucumber Bites

So next time you’re heading to a gathering and want to take something different that’s also gluten free, dairy free, paleo and vegan friendly, give these a go. They’re fresh, full of flavour, they look oh so cute!

Cucumber Bites

1 cup raw cashews, soaked overnight

¼ cup lemon juice

pinch of sea salt

2 tbsp fresh dill, chopped finely

1 tbsp fresh chives, chopped finely

2 Lebanese cucumbers, sliced into rounds ½ cm thick

½ punnet cherry tomatoes, halved

Let’s do this!

Put the cashews, lemon juice and salt in a high speed blender (or food processor), and blend until smooth. If the mixture is too sticky, add a tiny bit of water (a teaspoon at a time) to get it going.

Add the dill and chives, and pulse until herbs are mixed through.

To build your bites, use the cucumber slice as your base, add 1 heaped teaspoon of cashew cream mix, and top with a cherry tomato. Yum!
