Think you don’t have time for a healthy breakfast? Think again. A quick half hour of meal prep to make these Easy Peasy Brekky Bites on a Sunday could see you through the week in style!
Alternate these babies with some pre-made chia puddings or super-fast smoothies and you will start the day the right way all week long!
Easy Peasy Brekky Bites
Ingredients:
6 large eggs, whisked
1 small zucchini, grated
1 small carrot, grated
A handful of fresh parsley, chopped
A couple of teaspoons of extra virgin olive oil
Let’s do this!
Pre-heat your oven to 180°C.
Cut out 6 small squares of greaseproof paper (about 10-15cm wide), and brush one side of them with olive oil.
Place the squares into a small, 6-cup muffin tin, and fill each cup with the grated zucchini and carrot.
Next, pour equal amounts of the egg mixture into each cup.
Bake for 15-20 minutes, or until cooked in the middle (the brekky bites should spring back when touched on the top).
Let cool for 20 minutes and then remove from tin.
Makes 6 awesome easy peasy brekky bites (I have 2 each day for breakfast!)
