I love bliss balls, but most of them are chocolatey – and this week I felt like something different. But the majority of white bliss ball recipes have milk powder in them. So after a little research I’ve come up with this yummy dairy free alternative:
1 cup almonds
1 1/2 cups shredded coconut (plus a little extra on a plate for coating the balls)
1 cup chopped dried apricots
1/4 cup honey
1/4 cup coconut oil
1 tsp vanilla essence
Let’s do this!
Blend the almonds in a food processor with an “S” blade until they turn into a fine powder.
Add the shredded coconut and process another 20 seconds.
Add the apricots, coconut oil, honey and vanilla, and process until there are no visible apricot lumps.
If the mixture is too dry, you may add a little more coconut oil or honey. If it’s too wet, add a little more shredded coconut.
Shape into balls about 2.5cm in diameter, and then roll them in the leftover shredded coconut. Put in the fridge for an hour or two. The longer you leave them, the better they will set (although I must admit we “tested” some before they even went in the fridge!).
Makes about 16 decadent white bliss balls.
