19 Feb chocolate fig chia pudding
Simple. Fresh. Seasonal. This dessert has it all.
I love fig season. These luscious, nutrient-rich gems are naturally sweet and amazingly high in calcium. Like you needed another reason to eat them anyway? And raw cacao is high in magnesium, so you have the perfect calcium-magnesium hit – perfect for busy women!
Does this dessert’s high nutrient content class it as a superfood? I think so. It’s certainly super delicious!
1/2 cup chia seeds
2 1/4 cups almond milk
1 1/2 tbsp cacao powder
1 tbsp maple syrup
2 fresh figs
Let’s do this!
Whisk together the chia seeds, almond milk, cacao powder and maple syrup. Let stand 5 minutes and then whisk again.
Set aside for 2 hours (you may keep it in the fridge like this for up to 24 hours).
Serve topped with fresh figs.
Variations: Top with a spoonful of coconut yoghurt or a sprinkle of orange zest for a little extra kapow!
