Need a healthy, paleo-friendly salad recipe that you can whip up for a dinner or BBQ? I’m ALL about making stuff that’s easy AND delicious! Here’s a healthy salad recipe from my awesome 12 week program, Shiny Healthy You.
It’s gluten, dairy and cane sugar free without compromising on taste. Not for one minute. This cauliflower cous cous variation is packed full of sweetness thanks to the carrots, and has a beautiful nuttiness from the macadamia oil. Yep, this little salad is big on flavour.
And easy to make? You betcha! Because who wants to be stuck in the kitchen all summer long?
Ingredients:
2 cups of carrots, chopped into discs 1/2 cm thick
2 tsp honey
2 tbsp macadamia oil
1/2 cauliflower
1/2 cup raw almonds, chopped coarsely
1/4 cup chopped fresh parsley
1 spring onion, chopped finely
Juice of 1/2 lemon
Pinch of salt
Let’s do this!
Toss the carrots in 1 tbsp macadamia oil and 2 tsp honey.
Spread out on a sheet of baking paper and bake at 180°C for 20-25 mins or until soft.
Remove the stems from as much of the cauliflower as possible, and whizz in a food processor until it resembles cous cous.
Add the roast carrots, almonds, parsley, spring onion, lemon juice, salt and remainder of the macadamia oil and toss thoroughly.
Serves 4 as a side salad.
Note: If you can’t find macadamia oil, olive oil works fine as a substitute.
