Gluten free, dairy free, paleo zucchini and kale salad

I know you’re looking for more ways to include kale in your diet, right? Look no further!

This fresh, Italian-inspired salad is awesome, because it’s super quick to prepare and full of flavour. Pair this gutsy salad with a nice rare steak, or have it on its own for a simple, light lunch. With so many nutrient-rich greens in this dish, you’ll feel amazing afterwards!

 

Ingredients

4-5 large, shredded kale leaves, stems removed

1 small zucchini, peeled into strips

1 cup sunflower sprouts

1 cup watercress, torn roughly

1/4 cup basil leaves, torn

1/2 red capsicum, sliced finely

1/4 cup raw pine nuts

2 tbsp microherbs (I used red garnet microherbs, if you can’t find these, you can use chopped parsley or alfalfa sprouts)

 

Dressing:

2 tbsp good quality balsamic vinegar

2 tbsp lemon juice

2 tbsp extra virgin olive oil

a large pinch of himalayan salt or sea salt

 

Let’s do this! 

In a large bowl, mix together all your salad ingredients, except the pine nuts and microherbs.

Mix together your dressing ingredients in a small cup or jar.

Gently toss your dressing through the salad.

Top with the pine nuts and microherbs.

Serves 2 as a main course, or 4 as a side salad.

    Made this for dinner tonight—very yummy and refreshing salad. Substituted one whole yellow capsicum for the half red capsicum,sunflower sprouts or watercress as I didnot have those. Will make it again, this time as per recipe. Thank you.
