09 Oct balsamic zucchini and kale salad

This fresh, Italian-inspired salad is awesome, because it’s super quick to prepare and full of flavour. Pair this gutsy salad with a nice rare steak, or have it on its own for a simple, light lunch. With so many nutrient-rich greens in this dish, you’ll feel amazing afterwards!
4-5 large, shredded kale leaves, stems removed
1 small zucchini, peeled into strips
1 cup sunflower sprouts
1 cup watercress, torn roughly
1/4 cup basil leaves, torn
1/2 red capsicum, sliced finely
1/4 cup raw pine nuts
2 tbsp microherbs (I used red garnet microherbs, if you can’t find these, you can use chopped parsley or alfalfa sprouts)
2 tbsp good quality balsamic vinegar
2 tbsp lemon juice
2 tbsp extra virgin olive oil
a large pinch of himalayan salt or sea salt
Let’s do this!
In a large bowl, mix together all your salad ingredients, except the pine nuts and microherbs.
Mix together your dressing ingredients in a small cup or jar.
Gently toss your dressing through the salad.
Top with the pine nuts and microherbs.
Serves 2 as a main course, or 4 as a side salad.
