You know the scenario… you walk to the fridge to make a creamy, delicious smoothie… open the door… and NO NUT MILK… arrrrrgh!!!
Fear not! Here’s a simple, super creamy smoothie that you can do from scratch, and guess what? You can make it without pfaffing around with a nut milk bag (pfaffing’s a word, right?).
Ok, here we go:
Into your Optimum blender, throw:
1/4 cup raw cashews
1 heaped tbsp dessicated coconut
Whizz this on a high speed for about 30 seconds.
A handful of frozen raspberries
2 tsp coconut oil
Optional: 1 scoop Sunwarrior vanilla rice protein powder
…and whizz for another 15 seconds.
This smoothie is really good for you because, unlike with other nut milks, you’re not removing any pulp. So you get more protein, more fibre, and more B vitamins. It’s a true wholefood experience. So keep some cashews and coconut in your pantry, and you’ll never be out of fresh, dairy free milk again!
